What is “Karushio”?
“Karushio” is a new concept in sodium-reduced eating, promoted by the National Cerebral and Cardiovascular Center of Japan (NCVC). The term means “light use of salt to enhance flavor,” and the initiative was created to spread healthier, low-sodium diets without compromising taste. The NCVC certifies products that meet strict standards under its Karushio Certification system, ensuring both reduced salt content and great flavor.

3 Key Features of the Karushio Series
01. 30%–50% Less Sodium
Each 8g serving of chirimen contains no more than 0.37g of salt. This is only about 14% of the Ministry of Health, Labour and Welfare’s recommended maximum sodium intake per meal for adult men.

Commonly referred to as “Kokkyu,” the National Cerebral and Cardiovascular Center (NCVC) is one of Japan’s leading national advanced medical research institutions. It is dedicated to identifying the causes of cardiovascular diseases such as stroke and heart disease, and to developing effective treatments. The NCVC is also known for creating the concept of “Japan’s most delicious hospital meals,” which are based on a new approach to reduced-sodium cooking that enhances flavor by using only a light amount of salt.
