Chirimen-jako refers to juvenile sardines (shirasu) that are carefully rinsed, boiled, and then dried in the sun or using other drying methods. Because they can be eaten whole—from head to tail—they are widely appreciated as a highly nutritious and health-friendly food. The unique name chirimen is said to originate from the way the sardines are laid out and sun-dried in bamboo trays, resembling chirimen silk fabric (though there are several theories about this origin). About the Nutritional Value of Chirimen-jako

    Since shirasu is highly perishable, freshness is essential. Immediately after the auction, the fish are thoroughly washed and quickly boiled in large kettles for about one minute. This results in "kama-age shirasu" (lightly boiled shirasu).
